Teriyaki Beef Stir Fry

Ingredients
  

Main Ingredients
  • 1 pound flank steak, sirloin, or skirt steak Choose any of these cuts for best results.
  • 2-4 cups various veggies (broccoli, bell pepper, snap peas, carrots, onion) Pick a mix of your choice.
  • 3 cloves garlic, minced Use fresh for best flavor.
  • 1-2 teaspoons fresh ginger, minced (or ginger paste) Adjust according to taste.
  • 1/2 cup teriyaki sauce Can be homemade or store-bought.
  • 2 tablespoons neutral oil (avocado or canola) Used for cooking.
  • to taste sesame seeds, green onions, lime Optional toppings.
Homemade Teriyaki Sauce
  • 1/2 cup soy sauce Use low sodium if preferred.
  • 1/3 cup water
  • 2-3 tablespoons brown sugar or honey Adjust sweetness as desired.
  • 2 cloves minced garlic
  • 1-2 teaspoons minced ginger
  • 1 tablespoon cornstarch For thickening the sauce.
  • 2 tablespoons cold water To mix with cornstarch.

Method
 

Preparation
  1. Slice the beef thinly against the grain. If it's tough, freeze for 10-15 minutes first.
  2. Mix a couple spoonfuls of teriyaki sauce with the beef and let it marinate while chopping veggies.
Cooking
  1. Heat a large skillet or wok until hot and add some oil.
  2. Cook the beef in a single layer to achieve browning, do it in batches if necessary.
  3. Remove the beef and add chosen veggies, stir-frying until crisp-tender. Add more oil if the pan looks dry.
  4. For the last 30 seconds of cooking, add the minced garlic and ginger to avoid burning.
  5. Return the beef to the pan, pour in additional teriyaki sauce, and toss for 1-2 minutes until everything is shiny.

Notes

Serve over jasmine rice or with a cucumber salad for a refreshing dish. Keep rice and beef separate if meal prepping to maintain texture.
