Ingredients
  

Main Ingredients
  • 1 cup Uncooked long-grain white rice or glutinous rice High-quality rice recommended; Jasmine rice for fragrance; glutinous rice for stickiness.
  • 2 leaves Makrut lime leaves (optional) Adds an aromatic punch, can be found at Asian grocery stores.
  • 1-2 stalks Lemongrass (optional) Fresh preferred; dried can be used as a substitute.
  • 1 piece Galangal (optional) Fresh is best for an authentic flavor.

Method
 

Toast the Rice
  1. Heat a dry skillet or frying pan over medium-high heat. Add the uncooked rice, making sure the grains are spread evenly across the surface.
  2. Stir the rice constantly for about 10-12 minutes, or until it transforms into a deep brown color and releases a rich, nutty aroma.
  3. If adding makrut lime leaves, toss them in the pan with the rice and remove once they become dry and crisp.
Add Flavor
  1. If using lemongrass or galangal, slice them thinly and toss them into the pan in the last 2 minutes of toasting.
Grind it Up
  1. Once the rice is toasted, remove from heat, discard the lime leaves if used, and allow to cool slightly.
  2. Transfer the mixture to a coffee grinder or use a mortar and pestle to grind it into a fine, sandy texture.
Store It Right
  1. Place your Toasted Rice Powder in a tightly sealed container. It can last at room temperature for a few weeks; refrigerate for longer storage.

Notes

Storage: Store in an airtight container in a cool, dark place, up to 3 months if refrigerated. Can double or triple the batch for quick weeknight meals or special occasions. Avoid over-toasting to prevent burnt flavors.
